This cheesy guacamole tostada is my go-to when I want chips and guac for dinner but need something more substantial. The baked tortilla stays crispy under a layer of melted cheese, and the fresh guacamole on top gives you that creamy, tangy flavor I crave. It comes together in 20 minutes, and my family loves it. I'll sometimes add a side salad or fruit to round it out.

Why You’ll Love This Cheesy Guacamole Tostada

  • The tortillas bake up crispy without any oil, so these tostadas are lighter than fried versions.
  • Melted cheese on the tortilla creates a barrier that keeps the crunch even after you pile on the guacamole.
  • You can have a satisfying dinner on the table in the time it takes to mash an avocado.

Key Ingredients for the Best Guacamole Tostada

  • Avocados: Look for avocados that yield to gentle pressure but aren't mushy. They should be dark green or nearly black for Hass avocados. If they're too firm, let them ripen at room temperature for a day or two.
  • Tortillas: You can use either flour or corn tortillas. Corn tortillas are naturally gluten-free and have a more authentic tostada texture. Flour tortillas are softer and puff up more, so poking holes is essential.
  • Lime juice: Fresh lime juice is key for bright flavor. Bottled juice won't give you the same zing. Roll the lime on the counter before cutting to get more juice out.

Kitchen Tools for Making Baked Tostadas

  • Baking sheet (large enough to hold 4 tortillas in a single layer)
  • Fork (for poking holes in the tortillas to prevent puffing)
  • Cooking spray (or a pastry brush with oil)
  • Mixing bowl and fork for mashing the guacamole

Tips for Making the Best Cheesy Guacamole Tostadas

To get perfectly crispy tostadas without frying, start by spraying both sides of the tortillas with cooking spray and sprinkling a little salt on each side. Poking holes all over with a fork is the trick to keep them from puffing up in the oven. Bake at 400°F for 4 to 5 minutes, then flip and bake for 2 more minutes. Sprinkle the cheese evenly over the tortillas and return to the oven for about 2 minutes, just until the cheese melts. You can use corn or flour tortillas, whichever you prefer. If you want extra cheese, add more on top after the guacamole.

Expert Tips for a Perfect Guacamole Tostada

For the creamiest guacamole, use avocados that are perfectly ripe. Press the avocado gently; if it leaves a slight indent, it's ready. Mash with a fork, leaving some chunks for texture. Stir in the lime juice right away to help prevent browning. If you're making the guacamole ahead of time, press a piece of plastic wrap directly onto the surface before refrigerating. For a little extra color on the cheese, switch the oven to broil for the last 30 seconds of melting, but watch closely so it doesn't burn.

Guacamole Tostada Variations to Try

You can easily turn these tostadas into a loaded meal. Add a layer of warm refried beans under the cheese for extra protein and creaminess. For a spicy kick, use pepper jack cheese instead of cheddar, or stir a minced jalapeno into the guacamole. If you want to add meat, top the cheese with shredded chicken or seasoned ground beef before baking. To make it dairy-free, skip the cheese or use a vegan shred that melts well. The guacamole itself is naturally vegan and gluten-free when you use corn tortillas.

What to Serve with Cheesy Guacamole Tostadas

These tostadas are hearty enough to be a meal on their own, but I like to round them out with a simple side. A crisp green salad with a lime vinaigrette complements the creamy guacamole. Fresh fruit, like sliced mango or watermelon, adds a sweet contrast. If you're serving them as a snack or appetizer, set out bowls of salsa, sour cream, and extra cilantro for dipping and topping.

How to Store Leftover Guacamole Tostadas

These tostadas are best eaten right away while the tortillas are still crispy. If you have leftovers, store the components separately. Place the baked tortillas in an airtight container at room temperature for up to 1 day. They may soften slightly but can be recrisped in the oven. Store leftover guacamole in a bowl with a tight lid or plastic wrap pressed onto the surface. It will keep in the fridge for up to 2 days.

Can You Freeze Guacamole Tostadas?

Freezing assembled tostadas is not recommended because the guacamole will become watery and the tortillas will get soggy. However, you can freeze the baked tortillas (without any toppings) in a freezer-safe bag for up to 2 months. To use, reheat them directly from frozen in a 400°F oven for 3 to 4 minutes until crisp. Then add fresh guacamole and cheese.

Best Way to Reheat Baked Tostadas

To bring leftover tostadas back to life, reheat only the tortilla base. Place the baked tortillas on a baking sheet in a 350°F oven for 3 to 5 minutes until they are hot and crispy again. Do not reheat the guacamole, as it will turn brown and lose its texture. Instead, add fresh guacamole after reheating the tortilla. If you have leftover guacamole, just spoon it on cold.

Instructions

  1. Preheat oven to 400 degrees F. Spray both sides of the flour tortillas with cooking spray. Sprinkle a little bit of salt on each side of the tortilla. Using a fork, poke little holes all over the tortillas. This will prevent them from puffing up in the oven. Place on a large baking sheet and bake for 4-5 minutes, then turn tortillas over, and bake for 2 more minutes. Remove from oven and sprinkle cheese evenly on all of the tortillas. Place back and oven and bake just until cheese is melted, about 2 more minutes. Remove from oven and set aside.
  2. To make the guacamole, cut the avocados in half and remove the seeds. With a spoon, scoop out avocado from the peel and put in a medium mixing bowl. Mash the avocado with a fork, leaving some chunks. Stir in the lime juice, red onion, cilantro, and tomato. Season with salt and black pepper, to taste.
  3. Spread guacamole evenly on tostadas. Top with additional shredded cheese, if desired. Serve immediately.
